TOFU OMELETTE WITH HOMEMADE GARLIC SWEET POTATO AND MUSHROOM BAKED BEANS

TOPPED WITH YOGURT AND THYME

YUM!

This is a great healthy breakfast recipe if you have a reducing or meat free diet or just want a tasty alternative to your full english. It is designed to be super high in protein but retaining a reasonable level of beneficial carbohydrates and loads of vitamins and minerals. It is especially good for periods of intensive training or recovery from injury. It provides about 30% of the nutrient needs of a 12 stone man doing an intensive training block!……

AND TASTES FANTASTIC!

Ingredients

Omelette

  1. 2 large organic eggs
  2. A glug of milk
  3. Pinch of salt
  4. Black Pepper
  5. A few slices of organic tofu (fermented or flavoured as preferred)/ dash of soya sauce

Home made baked beans (per person)

  1. 1/2 medium sweet potato
  2. Three large mushrooms
  3. A clove of garlic
  4. 1/2 tin of black eyed beans
  5. Tomato puree
  6. Water
  7. Salt and pepper to taste
  8. Sugar
  9. White wine vinegar

Topping.

  1. Organic yogurt
  2. Fresh or dried thyme

How to make it……

First

  1. Crack the eggs into a bowl with milk, salt and pepper and whisk.
  2. Fry tofu in a pan until brown dousing with soy sauce to flavour.

Homemade baked beans

  1. Chop and fry sweet potato until lightly browned in a saucepan.
  2. Add garlic and chopped mushrooms and soften.
  3. Pour in beans, add a good squirt of tomato puree and water if necessary.
  4. Cook gently until unctuous add salt, pepper a large pinch of sugar and a dash of vinegar to taste.
  5. Leave to cool while you make the Omelette.

Now make your omelette and put it all together..

  1. With the pan still hot pour the eggs over the tofu and cook gently with a lid on until firm.
  2. Gently loosen the base with a spatula and slide onto a plate.
  3. Pour the baked bean mixture onto the omelette.
  4. Pour on a yogurt to taste, sprinkle with thyme and season.
